Wijngaard en wijnbouw:
Juan Antonio werkt biologisch-biodynamisch in de wijngaard en alle oogst is manueel.
Deze wijn is gemaakt van Bobal druiven, afkomstig uit de Pino wijngaard, van 35 jaar oud en geteeld op kalkbodem.

Vinificatie:
In de kelder kiest Juan Antonio voor een natuurlijke aanpak, met beperkt gebruik van sulfiet. Deze wijn wordt gerijpt gedurende 11 maanden in Franse eikenhouten vaten. Er worden uitsluitend natuurlijke gisten gebruikt. De wijn wordt noch geklaard noch gefilterd.

Proefnotitie:
Bobal is voor veel wijnliefhebbers nog een onbekende parel. Dat dit druivenras fantastische wijnen kan voortbrengen, bewijst
deze Pino 2019. Meteen word je verleid door een aangename, strakke, frisse geur vol zwart fruit (bramen en bessen) en gedroogde kruiden. Het fruit is mooi rijp maar zeer elegant en lichtvoetig. Ook in de mond valt de frisheid en het sappig karakter vooral
op, met een mooi evenwicht tussen fruit, zuren en tannines. Een heel licht, aangenaam vegetaal kantje zorgt voor bijkomende
frisheid. Daar waar bobal vroeger bijna altijd stugge en harde wijnen gaf, bewijst deze Pino 2019 dat tegenwoordig complexiteit
en elegantie (gelukkig maar) de moderne stijl uitmaken. Absoluut te ontdekken!

The 2019 Pino is only 12.5% alcohol (the 2020 tasted next to it is 14%!) and has a pH of 3.55, from an atypical vintage when the wine comes through as more elegant, as this is usually one of the most intense wines in the portfolio. It fermented in 4,500-liter oak vats but matured in 600-liter barrels. This is completely unusual, and possibly unique given the conditions of the year, which might never happen again. This is the only vintage of Pino with this profile. 2019 was a very warm year, and they picked the grapes very early – it’s picked with Clos Lojen, one of the earliest vineyards. So, they picked the grapes before the rain, and the grapes were pressed quite quickly, produced with very short macerations, resulting in a lighter but very mineral wine. I find it very elegant and delicious, and the soil comes through quite transparently—the chalkiness of the limestone is in the texture. 3,000 bottles were filled unfined and unfiltered in July 2020.
