The flor-infused white 2022 Fiorella was produced with Chasselas Doré grapes, a variety with a tendency to develop a layer of flor yeasts. Since 2021, it was aged in used Sherry casks he purchased from Argüeso in Jerez. It fermented with indigenous yeasts and skins for 12 days and matured in the butts that were not filled to the top to allow the development of the flor. It has a pale golden color and a nose marked by the yeasts, nuts, brine and iodine, spicy and dry, with a light and delicate palate. It has 13% alcohol, a pH of 3.3 and 5.8 grams of acidity. It finishes with a salty and bitter twist. 1,000 bottles produced. It was bottled in October 2023. This is sold without appellation of origin.
