The 2023 La Peguera is pure Albillo Real from three vineyards in Cebreros on a north-facing slope on the way to El Tiemblo on granite soils at 700 meters in altitude. It was produced in exactly the same way as the blended white from Finca la Coronilla: 15 days of skin contact and then part of the wine matured in a 500-liter chestnut barrel and the rest in stainless steel, where it matured with lees that are occasionally stirred; then the wine was blended using the wine in wood as a base and adding the one from stainless steel until he finds the balance he likes. The wines are quite similar, with a hazy amber color and a nose marked by the skin contact, yellow fruit, quince paste and pollen with an earthy touch, more honeyed and with nutty undertones, a little rounder and riper in this case, reaching 13% alcohol and with a slightly higher pH, 3.5. 1,000 bottles produced. It was bottled in January 2024. This is now DOP Cebreros.
